butter

bird's eye chillies, deseeded and finely chopped, plus extra to garnish (optional)

garlic cloves, crushed

-400g tin artichoke hearts, drained, rinsed and quartered

skinless chicken breasts, about 700g, cut into strips

75 g

walnuts, toasted and roughly chopped

Juice 1 lemon

Large handful parsley, roughly chopped

  1. Cook spaghetti in a large pan of boiling salted water according to pack instructions, until al dente.
  2. Meanwhile, melt butter in a medium frying pan over high heat and add the chillies, garlic and artichokes. Fry 1min, until fragrant. Add chicken with some seasoning and fry until cooked through, about 4min.
  3. Stir walnuts and lemon juice into the chicken. Drain spaghetti and add to the pan, stirring to coat. Stir through the parsley then divide between 4 plates or bowls, sprinkle with extra chilli, if using, and serve.
